There are many key factors in making a "Pizza in Pala Romana". We use "OO" flour with five variationsof cereal with seeds all imported from Italy, resulting in a light, airy, crispy crust. The preparation process for this crust takes a minimum of 72 hours and a hydration rate of 80%. Pala Romana is baked at a temperature of 572 degrees & cooked cooked at a temperature lower than our Pizaa Napoletana. For this specific reason we use the "State of the Art" Moretti Forno imported from Italy, with a deck fully lined in stone.
